Caring for your cheesecake

   Keep it frozen

   Move the cheesecake to your freezer as soon as it arrives. It keeps beautifully for up to 30 days.

   Thaw in the refrigerator

   Transfer it to the fridge — still wrapped — for 6 to 8 hours, or overnight. Do not thaw it on the counter.

   Unwrap after thawing

   Leaving the wrap on while it thaws lets condensation form on the wrap instead of on the cake.

   Slice with a warm, dry knife

   Dip the blade in hot water, wipe it dry, then cut. Wipe between every slice for clean edges.

   Serve slightly chilled

   Let slices sit out about 10 minutes before serving. Refrigerate leftovers covered for up to 4 days.
